Our friend Bev, the winner of the August Blog Contest, included a recipe for her Fresh Apple Cake along with her winning comment and I knew just had to try it. You can use any kind of apple so I chose Granny Smith and it was moist, marvelous, and a winning recipe with my entire family. And as you can see... make it in a bundt pan, drizzle it with a simple powdered sugar glaze and it isjust as pretty as it is yummy. So here's the recipe if you want to give it a try... enjoy!
Fresh Apple Cake
Fresh Apple Cake
3 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 cup cooking oil
2 cups sugar
2 eggs
2 tsp. vanilla
3 cups peeled, chopped apples
1 cup chopped nuts, optional (I used walnuts)
Preheat oven to 325*. Grease and flour Bundt or tube pan or use Pam.
Mix flour, soda, salt and cinnamon and mix together well.
In large mixing bowl combine oil and sugar. Cream thoroughly, then add eggs and vanilla and continue beating until light and fluffy.
Add dry ingredients and apples and beat on low speed just until throughly blended.
Pour into pan and bake 1 hour and 15 minutes... glaze if you like... and enjoy!!
